I have exactly one month to try and figure out how to bake a cake without using eggs. I am 2 cakes down and unsuccesful. The first one I tried from scratch from a recipe I got from a friend. It did not come out at all... I thought that since I am not the best baker in the world that it was something I did wrong.
Along came Duncan. Duncan Hines that is. It is the only boxed cake mix that does not contain milk. I heard that you can substitute the egg with either soy milk or applesuace. I have tried both. Today I tried the soy milk and this is what happened when I tried to get it out of the pan.... Ughhhhhh. FRUSTRATING.
So, now I need to find something called Ener-G Egg Replacer... I am PRAYING that I can substitute the 3 eggs with this stuff and it will come out. Wish me luck. I am hoping the 3rd time is the charm. I really want my son to enjoy cake for his first birthday.
